Executive Mitch Thomas brings 32 years experience to the Coyote Grill at San Ignacio. Mitchell attended Scottsdale Culinary Institute and did his internship at the world-famous La Chau Mire in Scottsdale Arizona, and Le Escargot in La Jolla California. He has done stints with the Hyatt Regency at Gainey Ranch, The Phoenician Ritz-Carlton, Hilton, and Intercontinental Hotels. He spent 10 years in the Pacific Northwest working in and opening Bistros gaining experience in Farm-to-Table cuisine building strong relationships with the farmers, ranchers and a love for the freshest food. He has won 2 first place awards in Spokane Washington for 1st course and Entree categories which is equivalent to Iron Chef Tucson. Now Chef Thomas brings his expertise to the Coyote Grill at Welcome to San Ignacio Golf Club. Besides insisting on Certified Arizona Angus Beef, Chef Thomas also uses local produce from Native American growers, Romona Farms.
